Tell us a little about you and your love of food:

My love of food started very young. I was raised with a lot of Ghanaian home cooking that was mostly done by my father and mother. To be honest I liked my mothers cooking the most 🙂 . Especially during Christmas, Easter, and birthdays, my mother would cook the most delicious African meals for us. My favorite is black bean sauce. I kept my family traditions when I started my own family. You can always find a black bean sauce on our table during Christmas or Easter.

Tell us why you decided to open a restaurant:

We decided to open a restaurant when we moved to the Dominican Republic almost 6 years ago. This had everything to do with our love for traveling and food. We opened a breakfast and brunch place called breakers cafe.

Please give us a taste of Breakers Cafe with your favorite recipe:  

Spicy Shrimp Thai Noodle Soup

* 1 large red onion

* 3 garlic cloves

* Fresh coriander

* 2 Lemongrass leaves

* 100g Beansprouts

* 1 teaspoon cut ginger

* 100g mushrooms

* 200g large Shrimps

* 100g rice noodles

* 2 cans of organic coconut milk

* 70 g Red Curry paste

* Chili flakes

* Salt and pepper

Preparation 

  • Heat in a big wok pan 1 spoon of vegetable oil. Sauté the onion, garlic, and ginger.
  • Add 400 ml water, the 2 cans of organic coconut milk and the Red Curry paste, stir until all the ingredients are mixed and it looks like soup.
  • Add all the vegetables, lemon grass and let it cook for 5 minutes.
  • In the meantime sauté the Shrimps in vegetable oil and add salt and pepper. Add the chili flakes to the shrimp and take it from the stove.
  • Add the cooked rice noodles to the soup and cook for 5 more minutes.
  • Take out the lemon grass leaves. Add some salt and pepper to your liking and chili flakes.

Take a big bowl and add some soup and decorate with Shrimps, beansprouts and fresh coriander.

Why is this recipe important to you?

 I learned to make this soup 14 years ago when we traveled to Thailand. I love the Thai way of cooking with all the fresh ingredients and Thai noodle soup is easy to make, nutritious and very tasty! I hope you like it as well!
