Our first recipe comes from a famous Mexican restaurant in Punta Cana! We’re already starting to feel hungry at the thought of some tasty Mexican food. Let’s see what we’ll be cooking today:

Tell us a little about you and your love of food:

For many years I have loved making family and friends happy on thanksgiving or Christmas with food. I love making different kinds of dishes for birthdays for friends and they always asked why not open a Restaurant! For many reasons and work, I didn’t have the time to improve or realize the Dream. But after I quit working at hard Rock Hotel and Casino I finally could devote my time to my food. I’m so happy after eight years doing what I love!

Tell us why you decided to open a restaurant:

There are many! In 2012 we saw the need to create a restaurant that would prepare food when ordered, using gluten-free ingredients without additives or processed. We only use organic products because most of the restaurants use frozen or processed products to save time.  From Production, a restaurant was born attended by the owner who is willing to please the diner. We eliminate waste of the ingredients because everything is prepared at the moment of order from our clients.

Please give us a taste of Pastrata with your favorite recipe:  

 Aguachile (Shrimp ceviche):

* 2 lb. Thawed Shrimp, cooked
* 2 large cucumbers, peeled
* finely chopped red onion
* Fresh Cilantro finely chopped
* 6 serrano chiles, chopped
* 2 cups seedless lemon juice
* Enough tostadas
* 1 tablespoon Seasoning Sauce (Maggi), tamari or soy sauce
* Salt and pepper

Preparation:

1) Peel and devein the shrimp, make a lengthwise cut and open the shrimp like the wings of a butterfly, rinse and drain well. Arrange the shrimp in a pan then pour 1 cup of lemon juice over them. (Make sure the lemon juice covers all the shrimp).

2) Wait 10 minutes, then add the seasoning sauce and marinate another 5 minutes. Drain, then add salt and pepper, chopped cucumber, 2 tablespoons cilantro, and chopped onion.

3) Blend the chopped chilies, 2 tablespoons cucumbers, 2 tablespoons cilantro, the remaining cup of lemon juice and salt. Pour this spicy salsa over the shrimp. Mix and your shrimp aguachile is ready!

Serve the aguachile over tostadas or totopos, for a delicious mexican appetizer
